THE HARDSHELL CLAM CAN CLOSE COMPLETELY WHEN TAPPED SO THE CONSUMER SHOULD THROW OUT ANY THAT ARE OPEN OR DO NOT CLOSE. MARKETED, THESE CLAMS ARE NOT CALLED “HARDSHELLS”, BUT ARE NAMED ACCORDING TO SIZE. THE SMALLEST BEING LITTLENECKS, THEN CHERRYSTONE, AND FINALLY TOP NECKS. CLAMS ARE SOLD LIVE IN BAGS AND ARE TENDER AND PLUMP WHEN RAW. COOKED THEY BECOME SWEET AND BRINY, SOFT AND JUICY. CLAMS CAN BE HARVESTED ANYWHERE FROM CANADA TO THE GULF OF MEXICO BUT THE MAIN UNITED STATES HARVEST IS FROM MASSACHUSETTS TO FLORIDA.
