HARVESTED FROM SANTA BARBARA TO THE ALEUTIAN ISLANDS OFF ALASKA, THIS CRAB IS OFTEN REFERRED TO AS SAN FRANCISCO CRAB. THIS MEAT IS OFTEN COMPARED TO MAINE LOBSTER BUT IS MORE TENDER. THE MEAT FOUND IN THE BODY IS NOT AS FIRM AS THE LEG MEAT. ONLY MALES ARE HARVESTED COMMERCIALLY AND HAVE A MINIMUM SIZE OF 6 ¼ INCHES. ONCE COOKED THE SHELL WILL TURN BRIGHT ORANGE.
