THERE ARE OVER 500 FLATFISH SPECIES THAT BELONG TO THE ORDER PLEURONECTIFORMES WHICH MEANS SIDE SWIMMER. FLATFISH ARE FOUND MAINLY IN NORTHERN WATERS OF BOTH THE ATLANTIC AND PACIFIC OCEANS AND LIVE ON THE SEA FLOOR. THESE FISH START LIFE WITH NORMAL EYE PLACEMENT BUT THEN THE EYE MIGRATES, SO THAT BOTH EYES ARE ON THE SAME SIDE. THESE FISH ARE LEAN, BONELESS, VERY FLAKY WITH A DELICATE FLAVOR. FILLETS CAN RANGE FROM 3 TO 16 OUNCES. SINCE IT IS LOW IN FAT, SOLE SHOULD BE COOKED QUICKLY TO AVOID DRYING OUT THE FISH.
