THIS FISH IS IMPORTED FROM NEW ZEALAND AND IS MOST OFTEN FROZEN AT SEA. THIS IS DONE BECAUSE THIS FISH CAN NOT BE ALLOWED TO BE OUT OF THE WATER WITHOUT REFRIGERATION VERY LONG BECAUSE THE FATS WILL TURN RANCID QUICKLY. THE LATERAL FAT LINE SHOULD ALWAYS BE REMOVED BEFORE USAGE. HOKI IS RELATED TO COD AND TASTES LIKE HADDOCK. RANGING FROM 3 TO 4 POUNDS, THIS FISH CAN BE AS MUCH AS 15 POUNDS. HOKI IS A PREFERRED FISH USED FOR WHITEFISH PORTIONS AND READY TO COOK BATTERED AND BREADED PRODUCTS.
