THE SHELLS ON THESE MUSSELS ARE SLIGHTELY OPEN WITH A MARKET SIZE OF 3 TO 4 INCHES. THEY ARE SWEET, DELICATE AND PLUMP. FARMED MOSTLY IN NEW ZEALAND, THEY ARE USUALLY FROZEN AND CAN BE STORED UP TO 24 MONTHS. AFTER THAWING, THEY SHOULD BE USED IN 2 TO 3 DAYS.
