SWORD CAN BE HARVESTED THROUGHOUT THE WORLD. THEY TYPICALLY MIGRATE FROM COLD WATER TO WARM WATER FOR SPAWNING. THIS FISH HAS SMOOTH SKIN AND THE FLESH HAS A WHORL PATTERN. THE MEAT IS MOIST AND SWEET WITH A MODERATELY HIGH OIL CONTENT. THE AVERAGE SIZE OF A SWORD FISH CAN RANGE FROM 50 TO 200 POUNDS. NIGHT TIME IS THE BEST TIME TO CATCH SWORD, PARTICULARLY DURING A FULL MOON. MERCURY ACCUMLATES IN THE SWORD DUE TO THEIR DIET, SO THE LARGER AND OLDER THE FISH, THE MORE MERCURY PRESENT.
