THE STATE FISH OF HAWAII, ALSO KNOWN AS DOLPHIN FISH, IS NOT ACTUALLY RELATED TO THE DOLPHIN AT ALL. THE TASTE IS SWEET AND MILD AND VERY MUCH LIKE THAT OF SWORD. IT’S ALSO VERY LEAN AND HAS FIRM, LARGE FLAKES. MAHI CAN GROW TO OVER 6 FEET AND WEIGH 8 TO 25 POUNDS, THOUGH 10 TO 15 POUNDS IS THE PREFERRED MARKET WEIGHT. THE BLOODLINE SHOULD BE REMOVED FOR APPEARANCE AS WELL AS TO AVOID STRONG FLAVOR. IF LEFT IN WARM CONDITIONS, THIS IS ONE OF THE SPECIES THAT CAN PRODUCE HISTAMINES, WHICH CAN LEAD TO SCROMBROID POISONING, OR FOOD POISONING.
