THIS SMALLER COUSIN OF THE TUNA CAN BE FOUND ON BOTH SIDES OF THE ATLANTIC, SWIMMING IN LARGE SCHOOLS. MACKERAL CAN SWIM UP TO 70 MILES AN HOUR AND IS RICH IN OMEGA 3. THIS IS A VERY STRONG-TASTING FISH BUT THE DARK BANDS OF MEAT CAN BE REMOVED FOR A SUBTLER FLAVOR. THE FLESH IS SOFT, MOIST AND FLAKY BUT WILL FIRM UP AFTER IT IS COOKED.
