THESE LOBSTERS ARE MARKETED AS EITHER WARM WATER OR COLD-WATER TAILS DEPENDING ON WHERE THEY WERE HARVESTED. WARM WATER TAILS COME FROM BRAZIL AND THE CARIBBEAN WHILE COLD WATER TAILS CAN BE FOUND IN THE WATERS OFF SOUTH AFRICA, NEW ZEALAND AND AUSTRALIA. THE SHELLS ARE TOUGHER ON COLD WATER TAILS BUT THE MEAT IS MORE TENDER AND SUCCULENT AND THEY SHRINK LESS DURING COOKING. THESE ANIMALS HAVE SMALLER CLAWS THAN THE AMERICAN LOBSTER.
