CAUGHT MOSTLY IN THE NEW ENGLAND AREA, THE AMERICAN LOBSTER CAN BE FOUND ANYWHERE FROM THE NORTH ATLANTIC TO NORTH CAROLINA. AFTER BEING CAUGHT THE LIVE LOBSTER CAN LIVE FOR AS LONG AS 24 HOURS IF KEPT IN A COOL ENVIRONMENT AND KEPT MOIST WITH SEAWEED OR PAPER TOWEL. THEY SHOULD NEVER BE PUT IN ICE OR WATER FOR STORAGE AS THEY CAN SUFFOCATE. LOBSTER IS MILD AND SWEET, WITH A FIRM, FIBROUS TEXTURE. THE TAIL MEAT IS FIRMER THAN THE CLAW MEAT. ALL LOBSTER TURNS BRIGHT RED AFTER COOKING.
