TWO THIRDS OF THE OYSTERS HARVESTED IN THE UNITED STATES ARE EASTERN OYSTERS. THEY CAN BE FOUND ALL ALONG THE ATLANTIC COAST. THEY BEAR THE NAME OF THE REGION IN WHICH THE WILD BEDS ARE LOCATED. OYSTER MEATS ARE FATTY WITH A SALTY, MEATY TEXTURE. THEY SHOULD BE SMOOTH WITH ENOUGH LIQUID INSIDE. THIS LIQUID SHOULD BE CLEAR. OYSTERS WILL CLOSE WHEN TAPPED.
