THESE OYSTERS HAVE A METALLIC TASTE, LIKE SUCKING ON A PENNY. THEY ARE MORE ROUND THAN ATLANTIC OR PACIFIC OYSTERS AND THE SHELLS ARE FLAT. THEY ARE SALTY WITH FLINTY OVERTONES. THEY CAN BE FOUND IN THE WATERS OFF ENGLAND AND FRANCE BUT ALSO NEAR NEW ENGLAND. THESE OYSTERS ARE BEST USED FOR THE PREPARATION OF OYSTERS ON THE HALF SHELL.
