THE PACIFIC OYSTER WAS BROUGHT TO THE UNITED STATES FROM JAPAN. IT HAS A DEEP CUP AND ELONGATED SHELL WHICH IS CURLY AND THICK. THE TASTE IS BRINY AND CRISP WITH THOSE COMING FROM CALIFORNIA HAVING A STRONGER TASTE. THEY ARE FARMED FROM ALASKA DOWN TO CALIFORNIA AND IN OTHER REGIONS AS LONG AS THE WATER IS TEMPERATE. THEY ARE NAMED FOR THE REGION IN WHICH THEY ARE HARVESTED WITH THE KUMAMOTO BEING FAVORED.
