THE SMALLER BAY SCALLOP IS CONSIDERED TO BE THE BEST TASTING OF THE SCALLOPS. IT HAS A MILD, SWEET FLAVOR WITH A FIRM AND MOIST TEXTURE. IT SHOULD NOT BE SLIPPERY OR SPONGY. THE SMELL SHOULD BE SWEET WITH A TOUCH OF SEAWEED. THE AVERAGE SIZE OF A BAY SCALLOP IS 70 TO 100 PER POUND. BAY SCALLOPS CAN BE FOUND ON THE EAST COAST FROM CANADA TO NORTH CAROLINA. THE SCALLOP USES ITS ABDUCTOR MUSCLE TO SWIM AND THAT IS THE EDIBLE MEAT.
