MOST STURGEON IS FARM RAISED IN CALIFORNIA. THERE ARE SEVEN SPECIES OF STURGEON BUT ONLY TWO ARE STILL OCCASIONALLY WILD CAUGHT OFF THE WEST COAST, THOSE BEING THE WHITE AND GREEN. THE SKIN ON THIS FISH IS INEDIBLE, BUT THE MEAT IS FIRM AND MEATY, MUCH LIKE CHICKEN OR VEAL. STURGEON HAVE NO SCALES AND NO SKELETON. INSTEAD THEY HAVE ROWS OF BONY SHIELDS AND CARTILAGE.
