THIS TUNA HAS A MILD, RICH TASTE WITH A STEAK LIKE TEXTURE. THE ALBACORE IS LESS DENSE THAN BLUE FIN AND IS THE FATTIEST OF THE SPECIES. IT ALSO HAS THE HIGHEST CONCENTRATION OF OMEGA 3 AND THE LIGHTEST COLOR MEAT. THE ALBACORE IS OFF WHITE TO BROWN WHEN RAW AND OFF WHITE WHEN COOKED.
