KNOWN IN HAWAII AS AHI, THE YELLOWFIN IS NAMED FOR THE BRIGHT YELLOW STRIPE ON ITS SKIN. YELLOWFIN CAN BE FOUND IN THE MORE TROPICAL REGIONS OF THE ATLANTIC AND PACIFIC OCEANS. THE AVERAGE SIZE OF A YELLOWFIN IS FROM 20 TO 120 POUNDS AND HAS BRIGHT RUBY COLORED FLESH. IT IS MUCH DARKER THAN ALBACORE BUT NOT AS DARK AS BLUEFIN. IT IS VERY FLAVORFUL AND TASTES LIKE SWORDFISH. THIS FISH IS EXCELLENT SERVED RAW.
