THIS IS THE ULTIMATE IN WILD PACIFIC SALMON AS THE NAME “KING” AND THE HIGH COST SUGGEST. THE AVERAGE SIZE OF THIS FISH IS 20 POUNDS. MEAT IS MOIST AND BUTTERY RICH DUE TO THE FAT STORED FOR THE MIGRATION TO SPAWN IN FRESHWATER. THE EARLIER IN THE SEASON IT IS CAUGHT THE BETTER THE FISH. AS THE FISH SWIMS UPSTREAM IT STOPS EATING AND BEGINS USING UP ITS FAT STORES IN THE EFFORT. THE FLESH WILL BEGIN TO SOFTEN AND THE COLOR FADE FROM THE DEEP RED TO THE GRAY IT APPEARS ONCE AT THE SPAWNING SITE. ONCE THE FISH REACHES THE SPAWING SITE, IT IS OF POOR QUALITY. THE WILD SALMON SEASON TYPICALLY BEGINS IN MAY OR EARLY JUNE.
