THE COHO SALMON HAS A HIGHER FAT CONTENT THAN CHUM AND IS MUCH MORE FLAVORFUL. THE FLESH COOKS UP FIRM BUT CAN APPEAR SOFT WHEN RAW. THE COLOR IS PINKER THAN CHUM BUT NOT NEARLY AS RED AS THE CHINOOK OR THE SOCKEYE. THIS FISH IS HIGH IN OMEGA 3 AND AVERAGES FROM 4 TO 12 POUNDS. THE COHO IS THE CLOSEST IN APPEARANCE TO THE FARM RAISED SALMON AND CAN EVEN BE FOUND IN THE GREAT LAKES.
